The Dum
Patience is our chief ingredient. Earthen pots are layered with tender meat cuts and aged basmati rice, then sealed tight with wheat dough (*pardah*). As heat rises gently from embers below, the steam cannot escape, forcing every aromatic drop of lamb marrow back through the rice grains.
